Coca Cola Cake


Today I made my first creation from the How to Be A Domestic Goddess cookbook that my sister gave me for my birthday. I haven't been baking sweets too much since my vow to eat healthier, but today seemed like a dessert day. I made the Coca Cola Cake. I loved this cake! It was so moist and delicious. My son was a little disappointed that he couldn't taste the Coke in the cake. The cake itself is one of those moist cakes that if you pressed the back of a fork to it, it would just lift up with the fork. The frosting makes a thin layer that is just the right sweetness for the cake. It is a cake that definitely be repeated, but I am quickly finding out that maybe it would be better made into mini muffins that could be frozen for later. Sitting here on the counter it is just calling my name and I am having a very hard time not answering the call. This is one of those make it and give the rest away cakes!

Isn't this a great recipe!! I made 12 good sized muffins from the batter. They didn't make it to the freezer though :-)
