Chocolate-Peanut Butter Cookies


MMMMM...Chocolate! I got this recipe from the Cooking Village website. Not only did these cookies sound good, but they also looked good. They took a little longer than normal cookies to make because you have to melt the chocolate and then let it cool. They were well worth the wait though. I really loved them. You get peanut butter with every bite of chocolate. It was kind of like eating a Reese's Peanut Butter Cup, which I love! They were kind of like little brownie cookies. I was a little worried at first because the batter was so thick. I mean thick! It also looked sort of dry, but the cookies didn't turn out that way. They were moist and chocolatey. Definitely a chocolate lovers delight! Hope you enjoy them!


Chocolate–Peanut Butter Cookies

2 squares (2 ounces) unsweetened chocolate, finely chopped
6 squares (6 ounces) semisweet chocolate, finely chopped
2 tablespoons butter
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 eggs
3/4 cup sugar
1/2 teaspoon vanilla extract
1 1/2 cups (9 ounces) peanut butter chips
1 1/2 cups (6 ounces) chopped unsalted peanuts

Directions
1. Preheat the oven to 350F. In the top of a double boiler over barely simmering water, melt the unsweetened and semisweet chocolates with the butter; stir until blended and smooth. Remove the pan from above the water and let the mixture cool to room temperature, about 20 minutes.

2. In a small bowl, mix the flour, baking powder and salt. In a large bowl, with a mixer on medium-high speed, beat the eggs, sugar and vanilla extract for 1 minute to blend. On low speed, beat in the cooled chocolate mixture until blended. Beat in the dry ingredients just until blended. With a rubber spatula, fold in the peanut butter chips and peanuts.

3. Drop the batter by rounded tablespoonfuls onto ungreased baking sheets. Bake 10 to 12 minutes, until cookies are just set. Transfer cookies to wire racks to cool completely.

I'm really intrigued with this recipe, the ratio of dry ingredients to wet is so different from my normal cookie recipes. I love that it has so many "add-ins", they are my favorite part of cookies.

Here from Michelle again.
My mom loves to make cookies. She made a bunch of the Doubletree Chocolate Chip cookies for my daughter to have at college. (Nyssa needed them for her RA meeting) Nyssa told me that now I am known as Nyssa's Mom or more importantly.... "the daughter of the Grandma who made those fabulous cookies". Mom will like these too.

She: YOU got CHOCOLATE in my PEANUT BUTTER!!!

They've been arguing for a generation, but the combination is undeniably tasty. I must go find some. Suddenly very hungry.
