Lemon Sugar Cookies

Lemon Sugar Cookies

Cookies
1 Cup unsalted butter, melted, cooled
1 Cup sugar
1/2 Cup packed light brown sugar
2 eggs
2 tsp vanilla
1 Tbs grated lemon peel
2 1/2 Cups flour
1 tsp baking powder
1/2 tsp salt

Glaze
1 Cup powdered sugar
2 Tbs lemon juice
1/4 tsp grated lemon peel

1. Heat oven to 375. Line 2 - 3 baking sheets with parchment paper

2. In medium bowl, whisk together butter, sugar & brown sugar. Whisk in eggs, vanilla and 1 tbs lemon peel until well blended. In another medium bowl, whisk together flour, baking powder and salt. Stir into butter mixture.

3. In small bowl, whisk together all glaze ingredients.

4. Use #16 cookie scoop or 1/4 Cup measure to scoop dough; place on baking sheets, leaving at least 3 inches between cookies. Flatten gently into 3 inch rounds.

5. Bake 10-12 minutes or until just golden brown around the edges but still pale in center and slightly soft. Remove from oven; immediately slide parchment paper onto wire rack. Cool 5-10 minutes. Brush glaze over cookies. Cool completely.

18 (4-inch) cookies

Thanks for posting this, sis! We actually went to Austin Java tonight for a late dinner, but we didn't buy a Lemon Pucker. I'll have to make some soon.

Mmmm. I LOVE cookies. Oatmeal is my favorite but sugar cookies are right up there too.
