Meet My Little Friends!


Ok, so I didn't make the post I promised on Monday. We had a flag football game and I got back a little too late and didn't feel like baking, but I will remedy that right now. I love pumpkin and this is one of my favorite pumpkin recipes. I got this recipe some time ago from a cookbook that I acquired somehow. I can't remember where I got it, but I love it. It is one of those cookbooks that you can tell is used a lot by all the torn pages and little bits of stains on the pages from oil & such. My family loves these cookies too. It makes quite a few cookies and I have never made them with the butterscotch chips since nobody else here would eat them if I did put them in. I replace those with mini chocolate chips. They are soft and moist and will stay that way for days. In my house they never last more than 2 days. I have posted the recipe below.

I also received the results of my MRI yesterday and they came back ok. They aren't sure of what is causing my headaches though. I have to go have my eyes checked now to ensure that isn't it. The doctor thinks it could be stress related. Me?? Stressed out??? Impossible! Anyways thank you for your well wishes. They were very much appreciated, and now for the recipe

Pumpkin Cookies
1 egg
1/2 Cup butter softened
1 Cup sugar
1-15 oz can pumpkin
1 tsp vanilla
2 Cups flour
1/2 tsp salt
1 tsp soda
1 tsp baking powder
1 tsp cinnamon
1 Cup butterscotch chips

Preheat oven to 375 degrees. Cream egg and butter until light. Add sugar & pumpkin; mix well. Add vanilla, flour salt, soda, baking powder and cinnamon. Mix well. Stir in butterscotch chips. Drop by teaspoonfuls onto ungreased cookie sheet. Baker for 12 to 14 minutes or until firm. Remove to wire rack to cool. Makes 3 dozen

Ooh, I am definitely making these at the B&B! I'd use chocolate chips, too. I love pumpkin and chocolate! I'm glad to hear your MRI went well.

Oh my it's that time of the year huh! Pumpkin cookies are something I will have to make this year - thanks! Glad to hear the MRI looked okay!
