Chocolate Zucchini Brownies


I made these last night for everyone to snack on. They tasted really good, but let me tell you they taste better the second day! You are supposed to frost them with chocolate frosting, but the majority of my household prefers cake plain. I did frost one for the sake of the picture. (Yeah right, you know it was really for me!) I actually love frosting on my cake! A cake just isn't a cake without it. The cupcakes were a little dry, but the flavor to made up for it. I know it isn't a healthy treat, but I will pretend it is for the zucchini. I got the recipe from the Allrecipes website, but here it is if you are interested.

Chocolate Zucchini Cupcakes

2 (1 ounce) squares unsweetened chocolate, melted
3 eggs
1 3/4 cups packed brown sugar
1 cup vegetable oil
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups grated zucchini
3/4 cup chopped walnuts
1 (16 ounce) package chocolate frosting
1/2 cup walnut halves

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs with sugar for about 10 minutes or until thickened and pale. Blend oil and cooled chocolate into the beaten egg mixture. In a small bowl stir together flour, baking powder, baking soda and salt; stir flour mixture into egg mixture until just blended. Stir in zucchini and chopped nuts. Using an ice-cream scoop, spoon batter into 24 paper-lined or greased muffin cups, filling the cups 2/3 full. Bake for 20 minutes or until fork or toothpick inserted in a cupcake's center comes out clean. Let cool in pans on rack for 10 minutes. Remove from pans; let cool completely. Spread with chocolate frosting and garnish with walnut or pecan halves.

Yummmmmmm.

I can't eat cake without frosting. Lots of it. Gobs, in fact. But if these brownies taste half as good as they look, I might give it a whirl. Pass one over, would ya? :-)

My grandma used to make zucchini bread with chocolate chips too! You have great recipes here. I had to come by and check out your site since you have such a great name and you spell it the right way :-)

It's that time of year when everyone's looking for something to do with their zucchini, and these look great. I would probably pass on the frosting, too, thought it's pretty in the photo.

I don't know, Michelle. It's hard to believe that zucchini is the right ingredient for a brownie. Do you really like these???
