Black Bean & Lettuce Bundles


I even suprise myself sometimes. I have been trying to cut down lately and decided to try to cook healthier. I made this last night for dinner and I was pleasantly suprised that everyone (including the pickiest eater) liked this. I got the recipes from my Weight Watchers recipe box. It came out wonderful. I even had the leftovers for lunch today. That in itself is unusual because I don't care to eat left overs. One of my daughter's teachers even asked me for the recipe because my daughter made it sound so good. I have never been a fan of black beans, but I think I might be changing my mind.... Here is the recipe for anyone who would like to have it. I know it will be one that I make again. We had it with a simple fajita mixture on top of some brown rice.

Black Bean Lettuce Bundles

1 C canned black beans
1/2 C cooked corn kernals
1/2 medium sweet red pepper, seeded & chopped
4 medium scallions, sliced
1/4 C cilantro chopped
2 Tbsp fresh lime juice
1 tsp olive oil
1 tsp ground cumin
1 meduim garlic clove, chopped
1/2 tsp salt
1 head Boston Lettuce

In a medium bowl, mix the black beans, corn, bell pepper, scallions, cilantro, lime juice, oil, cumin, garlic and salt. Refrigerate, covered, until the flavors are blended, at least 1 hour.

Place a lettuce leaf on a work surface and fill with about 1/3 cup of the bean mixture; fold up burrito-style. Repeat, using all the bean mixture (save any extra lettuce for a salad).

I really like Black Beans in Mexican restaurants but I've never made it myself. It does look very good!
