Something sweet for my sweets!


This afternoon I decided to take a break from all things quinceanera and baked brownies. It the first time I ever made a recipe from a book that I bought at a yard sale a long, long time ago! Looks can be deceiving because they look like chocolate brownies, but the only chocolate in them are the chocolate chips. The darkness comes from the coffee. While they are baking they smell wonderful. You can just smell the coffee in them and you can definitely taste the coffee in them. My mom said they were good. I thought she might like them because she likes coffee. Here is the recipe for any one who is interested.


COFFEE BLOND BROWNIES
1 lb dark brown sugar
¾ cup (1 ½ sticks) unsalted butter
2 tablespoons strong instant coffee powder
1 tablespoon hot water
2 eggs
2 tablespoons vanilla extract
2 cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup chopped pecans
1 cup semisweet chocolate chips

Heat brown sugar & butter in medium size saucepan over medium -low heat until the butter melts. Dissolve the coffee in the hot water and stir into the butter mixture. Let cool to room temperature. Preheat oven to 350. Butter an 11 x 8 inch baking pan. When the butter is cool, beat in eggs and vanilla with a hand held mixer. Sift the flour, baking powder, and salt together and stir it into the butter mixture with a wooden spoon. Stir in the pecans and chocolate. Spread the mixture evenly in the prepared pan with a rubber spatula. Bake until lightly browned, 25-30 minutes. Do not overbake. Cool completely and cut into 2" squares. 20 brownies.

Such a coincidence: we took the kids to the beach today. Before we left, my wife made a special treat to take with. Brownies!

Whoa! A whole pound of brown sugar! Oh, it makes a big pan of brownies. Eskie would like these, he loves coffee-flavored stuff.
