A Tasty Dinner With a Sweet Ending


Tonight I cooked a fairly simple & quick dinner. It was skirt steak cooked on the George Foreman grill with fried polenta, peas & carrots and mashed potatoes. It came out pretty tasty. Dessert wasn't too bad either. We had a simple Angel food cake topped with frozen strawberries and whipped topping. With so much going on trying to get ready for the party I will take any quick cooking ideas that I can come up with! The longest thing I had to wait for was the potatoes to finish cooking. I just rubbed the steak with Montreal Seasoning salt and stuck it on the grill. It was my first real attempt with polenta. My family didn't care too much for it, but I thought it was pretty good. Needed a little bit more flavor though. Maybe next time I will add in some jalapenos or something. My son said he thought he was eating a piece of mushy cornbread. Guess I still need to work on polenta technique. Until then..... MUSH! MUSH!

That looks good! You guys eat so well...we always end up eating no side dishes because I don't take the time to make them! Philis and Jessie add cheese (not so healthy) and green chilies to their polenta. You could also add rehydrated sun-dried tomatoes, or herbs or something to add more flavor.

I've had polenta at a party and I loved it. I have wanted to ry making it, but was afraid I'd mess it up. Was it easy to make?
