Bowties & Mushrooms


In trying to continue the bet tonight I made myself some pasta with Crimini Mushrooms. I added some Spinach at the end. I usually like to add some zuchinni, but I tried spinach instead. I just sauteed some mushrooms and garlic then added it to the pasta. I made everyone else Chicken Tacos which looked and smelled delicious, but by golly I am going to win this bet!


Tonight I made Strawberry Chocolate Bars for everyone to munch on. They have a crisp shortbread like crust and a creamy strawberry topping. The actual recipe calls for Raspberries, but I like Chocolate & strawberries so I decided to change it up. They were really good. I don't usually make bar cookies, but now that I have seen that it saves a lot of time by making bar cookies rather than drop, I might try to bake more of them for a while. We start softball season this week so I am going to need all the help I can get! Here is the recipe for those of you who might be interested.


Strawberry-Chocolate Bars

1 1/2 Cups flour
3/4 Cup sugar
3/4 Cup margarine or butter softened
1 package (10 oz) frozen strawberries, thawed and undrained
1/4 Cup orange juice
1 Tbsp cornstarch
3/4 Cup miniature semisweet chocolate chips

Heat oven to 350. Mix flour, sugar and margarine. Press in ungreased rectangular pan, 13x9x2. Bake 15 minutes.

Mix strawberries, orange juice and cornstarch in 1 quart saucepan. Heat to boiling, stirring constantly. Boil and stir 1 minute. Cool 10 minutes. Sprinkle chocolate chips over crust. Spoon strawberry mixture over chocolate chips. Bake about 20 minutes or until strawberry mixture is set. Refrigerate until chocolate is firm. Drizzle with additional melted chocolate if desired. Cut into 2 x 1 inch squares.

Finally, I got in, Michlelle. They all look good, but I'd prefer the pasta with mushrooms.....yummm.

My oh my! Those look so yummy! Everything in your blog looks heavenly! I am so interested in trying some of your recipes -- would you have any pasta and dessert dishes that are healthy and recommended for pregnant women? :D
