Pumpkin Bars


Tonight I wasn't going to make anything due to some major laziness on my part. I felt bad though because I haven't posted anything in a while, so I decided to make some pumpkin bars and am I glad I did. These are sooooo good. They are so moist and they kind of taste like a piece of pumpkin pie to me. I wish I had some whipping cream to top it off. No joke guys, these were really good. I will definitely be making these again. Especially during the winter nights. Right from the oven with some whipped topping... MMMMMM.... I got this recipe from the health website of my work. I hope you all enjoy it.

Tonight we had flag football and sad to say we lost. We are doing well during this season though. If I am not mistaken we have won more games than we have lost. I just say as long as the kids have fun that is all that matters. Gary has decided that he likes football so much next year he will be joining the athletic tackle team. That is when I will be pulling my hair out! Until next time....

Pumpkin Bars

Serves 18 squares

1 c. all-purpose flour
1 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 tsp. salt
3 eggs, lightly beaten, (or 3/4 c. egg substitute)
16 oz. can pumpkin
1 c. packed brown sugar
3 Tbs. vegetable oil

INSTRUCTIONS

Preheat the oven to 350 degrees and coat a 13 x 9 inch baking pan with non-stick cooking spray.

In a small bowl, sift together flours, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a large bowl, mix eggs, pumpkin, sugar, and oil. Add the flour mixture to the liquid ingredients and mix well. Spread the batter into a baking pan, evening it out with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in center comes out clean. Cut into 18 squares and store in an airtight container.
