A Little Problem & Some Cream Cheese Apple Crisp


First of all I wanted to let you know that I have been having a lot of problems with the spam comments on the blog. I decided it was best for me to put up the word verification step on posting comments. I hope this doesn't cause too much of a problem. I am hoping I won't have to use it forever, but who knows! I hope you will continue to visit my blog and post comments. Sorry for any inconvenience.

Now on to the Good stuff!! This afternoon was a lazy day afternoon, but I felt the need to munch on something sweet. I made this Apple Crisp that I got from my new Cooking Pleasures magazine. It was sooooo good! I left the apples kind of chunky and it tasted great! I took a sneak piece to taste it, but we plan on actually warming it up and topping it with ice cream. Without the ice cream it was fantastic, so I can just imagine what it will taste like with the ice cream. I hope you all enjoy it as much as I did! Here is the recipe.

CREAM CHEESE APPLE CRISP

Topping
1 1/2 Cups quick cooking oatmeal
1 1/3 Cups flour
1 Cup packed brown sugar
2 tsp ground cinnamon
3/4 Cup butter, chilled & cut up

Apples
6 Cups peeled, chopped Apples
1/3 Cup sugar
2 tbsp flour
1 tsp ground cinnamon
1/4 tsp salt

Filling
1 8oz pkg cream cheese softened
1/2 Cup sugar
2 eggs
2 Tbsp flour
2 Tbsp milk

Heat oven to 350. In large bowl stir together oatmeal, flour, brown sugar and cinnamon. Cut in butter until mixture is crumbly. Press half the mixture in the bottom of 13x9 inch glass baking dish; reserve remaining mixture for topping.

In large bowl toss together all apple ingredients until apples are coated. Spread over crust.

In large bowl beat cream cheese and sugar at medium speed until smooth. Add eggs, flour & milk; beat until combined. Spread over apple mixture; sprinkle with reserved oatmeal mixture.
Bake 40 to 45 minutes or until golden brown & apples are tender. Cool on wire rack.

12 servings.

Of your recent recipes, Michelle, I think I'd like the chicken and biscuits the most. I'll just have to get around to baking it!

I've had a few problems with SPAM lately but not enough to use the word verification yet. It was mostly just for 3 days about 3 weeks ago.

That sounds wonderful. I'll have to clip/copy that and try it. Depending on the kind of apples, it could be a touch tart to offset the creaminess of the cream cheese and sweetness of other layer.

Hello, Michele sent me again! The comment word verification really isn't a big deal and I don't know if it will cut down on the spam or not. I can just picture rooms full of people earning pennies an hour to click and type and click and type... sweatshops of spammers, doesn't that feel so 21st century? :|
